Sir Wasano's Infamous Indonesian Rice Salad (from Mollie Katzen's Moosewood Cookbook)
2 c. cooked, cooled brown rice
1/2 c. raisins
2 chopped scallions
1/4 c. toasted sesame seeds
1/2 c. thinly sliced water chestnuts
1 c. bean sprouts
1/4 c. toasted cashews
1 large chopped green pepper
1 stalk chopped celery fresh parsley
(I don't follow this very close - never used bean sprouts or water chestnuts, and usually use whatever crunchy vegetable we have around - peas, green beans, cucumber, etc. if I don't have pepper or celery.
I also usually use cilantro instead of parsley)

Dressing:
3/4 c. orange juice
1/2 c. safflower oil
1 Tbsp toasted sesame oil
3-4 Tbsp tamari
2 Tbsp dry sherry juice of one lemon
1-2 cloves minced garlic
1/2 to 1 tsp fresh grated ginger salt and pepper
